Super low-maintainence and warming, this is perfect for winter nights. Although I do find myself making this year-round because of how tasty, easy, and cheap it is.
I like to make a large amount of this and freeze the extra chicken and broth to use in other recipes or salads.
- Chicken on the bone – any kind works. Sometimes I buy a whole chicken and sometimes I just buy a pack or drumsticks. Any kind of uncooked chicken will work! Keep in mind the size of the crockpot/pan before buying a whole chicken.
- 1 tbsp Salt – Himalayan pink salt highly recommended
- Other seasonings you wish, such as paprika, garlic powder, any spice rub mix you have
- Assortment of vegetables: My favorites for this are leeks, any kind of squash, zucchini, carrots, onion, sweet potato and brussel sprouts. (I usually use 3-4 of these at a time)
